Chocolate Strawberry Shortcake Cupcakes!



Hey Everyone! Never baked for over a month! I know I've been getting people saying " Why haven't you baked lately!" Well I've been on vacation and was at my brother's wedding and catching up on orders! It's kinda hectic! Anyhow i made these yummy cupcakes i found on a IPad app, Has all different kinds of cupcakes! And it looked so good i had to try them! Took about 3 hours to bake,cool and decorate! Then after i made the cupcakes my neighbour friend was over and ask if she could buy a few cupcakes. I was more than happy to say yes! I made her day and it made my day that she loved my cupcakes!

Ingredients:
1 1/2 cups all-purpose flour

1 cup sugar 1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt

1 cup coconut milk
1/2 cup vegetable oil

2 tablespoons apple cider vinegar
2 teaspoons vanilla extract
2 teaspoon instant coffee powder

Frosting, recipe follows
1 1/2 cups hulled and sliced fresh strawberries
Confectioners sugar, for garnish, optional  

 1: Preheat the oven to 350 degrees F.
 2: Line 40 mini Muffin cups with 2 mini cupcake pan or 16 cups with 2 regular cupcake pans.
3: Sift or whisk together all the dry ingredients. 
4: In another bowl mix all liquid ingredients. 
5: Pour the liquid ingredients into the dry ingredients.Mix with fork or whisk.
 6: Bake for 20-22 minutes for mini and for regular 25 minutes. Let the cupcakes cool.
7:Optional: Cut between the cooled cupcake and pipe on the bottom half and put strawberries on top and then put the top half on a pipe and garnish it with a strawberry!

 
PS: In this recipe you can add pretty
       much  anything you like such
       as walnuts,peanuts etc...   Enjoy :)

Bacon Cheesecake Cupcakes

Candy Bacon + Cheesecake = Best cupcake ever!

I didn't think Cheesecake Cupcakes with bacon would be very appetizing . The cupcakes were for my mom's birthday! She always loved Cheesecake and Bacon! Well she found a recipe she wanted me to try, It took 5 hours from making the crust to cooling the cupcakes. It was worth the 5 hours! It's one of my favourite cupcake flavours! Although I don't really like Cheesecake these cupcakes sure changed my mind on Cheesecake! Try them,Trust me they are yummy!

All you need for the bacon part is: 4 strips of bacon,sugar! 
Best bacon you will ever try! Trust me on this one.

5 minutes of each side,Sugar on top.. And 
you're done!


Crispy as ever!


For the crust wafers,butter.sugar,bacon drippings,salt

And for the cupcakes egg,cream cheese,sugar,vanilla extract

Put them in the oven and chill for 5 hours!



Bacon and crust:
4 strips of bacon, cut into 1-inch pieces
3 tablespoons of sugar
12 chocolate wafers
2 tablespoons unsalted butter

For the CheeseCakes
1 8-ounce cream cheese softened
1/3 cup of sugar
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
1 large egg

1:To make the bacon, Preheat your own to 350. Line your muffin pan with 24 baking liners. Put the bacon in a large pan and cook over medium heat, stirring occasionally until brown, 5 minutes each side. Then poor off the drippings and reserve. Now the fun part.. Sprinkle 1 tablespoon of the sugar over bacon and cook. Place bacon on a plate and set aside.

2: To make the crust Pulse the wafers,butter and the 2 tablespoons of sugar and 1 tablespoon of bacon drippings and pinch of salt in a blender or a food processor until finely grounded. press 1 heaping teaspoon of the crumb mixture into regular or mini muffin liners. Bake for 12 minutes then cool.

3: To make the cheesecake : Reduce the oven temperature to 325. Mix together cream cheese,sugar and vanilla in a electric mixer. Mix for 4-5 minutes on medium speed. Slowly add flour and egg and mix until incorporated scraping down the bowl as needed. Fill muffin liners with 2 teaspoons full for a mini muffin liner or 2 tablespoons for regular cupcake liners. Bake for 20 minutes. Let cool in pan, then transfer pan to refrigerator and chill for 4 hours. Top each cupcake with a piece of candy bacon!

Customer ordered Cake Pops!

Hey everyone! I'm dearly sorry for not posting lately. I know it's not me.. is it? Well school is super busy with homework, pets to take care of and most important I've been getting ready to get a Teacup Mini Pig! Really excited. I have been convincing my parents all these weeks! That's why I haven't been blogging for awhile. My cupcake business is getting busy with orders! Anyhow i got a order for cake pops for a Diabetes Fundraiser. Here are some photos!

Cake Pops for Easter

My friend came over and we wanted to make Cake Pops for Easter! We had a plan to make Easter chickens that look like Bakerella's. That didn't work. We never had the proper sprinkles to make it look like a chiken. But we just had Easter sprinkles so we rolled the Cake pop in that and it still looked nice!

Fondant Cake

This is accomplishment I wanted to do before spring break ends. I never made a cake with Fondant before I just don't really make cakes. Yeah I will make a cake here and there from the box like I did today. I make cupcakes and cake pops not cakes.. But now I am going to start making cakes because I showed myself that yes I can make a great cake with not tons of detail. Here is pictures of the cake!

Cadbury Crème Egg Cupcakes

Cadbury Crème Egg Cupcakes


With Easter just weeks away, I heard of this idea from someone of making Cadbury Creme Egg Cupcakes for Easter. I though that would be great for many reasons. 1: My favourite chocolate. 2: Everyone loves that chocolate so why not give it a try? I got a recipe and started baking. It's great for Easter dessert! Give it a try.


Ingredients:


Batter of 24 cupcakes.


48 mini Cadbury Cupcake Eggs


1 batch of buttercream frosting


Large round piping






Directions:


1: Scoop batter into paper liner 2/3 of the way full. Place one Cadbury Creme Egg in the middle of each cupcake. Using a spatula to spread the batter over the egg.


2: Bake according to the recipe you are using.


3: While your cupcakes are cooking, make your buttercream.


4: Assemble your piping bag fitted with a large tip and pipe a large circle around the cupcake.


5: Top of your cupcake with a Mini Cadbury Cream Egg.
